Our home region of Yorkshire is famous for its rhubarb. An area of around ten square miles between Bradford, Wakefield and Leeds is home to the best tasting rhubarb in the world, and is known as the “Rhubarb Triangle”.
Neither fruit nor vegetable, rhubarb is a stalk technically known as a “rhizome”, and the method used in the Rhubarb triangle sees it grown in the dark and harvested by candlelight. Famously, it can be heard creaking as it grows.
Rhubarb has a flavour quite unlike anything else. It’s sharp, tangy and almost citrussy, with green herbaceous notes in the background. We choose supporting ingredients that emphasise its traits and also balance them out: apple brings out the sweetness, hibiscus dials up the sourness, rosehip and blackberry leaves accentuate the herbal qualities. The result is one of our very favourite creations here at Taylors – an evergreen favourite in our staff café.
